Laura Bush’s Baked Potato Soup

This is a delicious recipe. I have made it! (From the White House Website)

Ingredients:

6 cups left over mashed potatoes
2 tbsp. butter or margarine
1 medium onion, diced
1/2 lb. of bacon, diced, cooked and drained well (freeze bacon for easier cutting)
1 large red pepper, diced
2 cups sharp cheddar cheese, grated
1/2 cup chives, minced
4 tbsp. sour cream
aprox. 2-3 cups of whipping cream, half and half or milk
Kosher salt & fresh ground pepper to taste

Directions:

In a large soup pot, saute onions and red pepper over medium heat in 2 tablespoons butter until onions are clear. Add bacon, potatoes and whipping cream to desired consistency. Skim milk or chicken stock may be used to reduce calories. Salt and pepper to taste. Serve with a garnish of a dollop of sour cream, grated cheese and chives

Nancy Reagan’s Brownies

Description:

This recipe is from the Officers Wives Club Cookbook published in Panama in 1991.

Ingredients:
3 squares semisweet baking chocolate
2 squares unsweetened baking chocolate
3 sticks butter
6 eggs
2 cups granulated sugar
2/3 cup cake flour
1 1/2 teaspoon baking powder
1 tbsp vanilla
2 cups finely chopped pecans
confectioners sugar

Directions:

Melt chocolate and butter in top of a double boiler, then cool. Beat eggs and sugar until light in color. Add chocolate mixture to egg mixture. Sift together flour, salt, baking powder. Add to other ingredients. Mix in vanilla and nuts. Pour into buttered, floured 12 by 18 inch pan. Bake in preheated 350 degree oven 30 to 35 minutes. Cool. Sprinkle with powdered sugar.

Dick Cheney’s Grilled Trout Wyoming

Description:

This recipe was donated by former Secretary of Defense, now Vice President of the United States, Dick Cheney to the Officers Wives Club of Panama in 1991.

Ingredients:
1 lg. freshly-caught trout
salt
pepper
cornmeal
melted butter/margarine

Directions:

Preheat grill so it will score the fish. Cut cleaned fish to lie flat when open. Coat fish with cornmeal. Brush generously with butter. Cook on grill, allowing 5-6 minutes per side for a 4 to 5 pound trout.

Mexican Mound

Description:

“A great Bush favorite! Easy to make–loved by all who love Mexican food. Ingredients easy to keep in the house. Children or guests can all help with chopping or grating. It’s fun!” This recipe is from an Officer’s Wives Cookbook to which Barbara Bush generously submitted her recipes.

Ingredients:

A–Pkg. corn chips
B–2 lbs. ground meat
C–Taco seasoning mix
D–1 c. grated yellow cheese
E–1-2 sm. chopped onions (not minced)
F–10 chopped ripe black olives
G–1 chopped tomato
H–1 c. sour cream
I–Lettuce (1 c.) shredded
J–1 med. can frozen avocado dip

Directions:

Follow instructions on taco seasoning mix for browning meat. (Barbara says she serves this meal in her kitchen)

–a big pot of meat simmering on the stove, a wooden salad bowl of corn chips and 7 bowls (D-J) of the remaining ingredients around the table. Start with a mound of corn chips, a spoon of piping hot meat, cheese, etc.
